i'm using Anderson Duck Glue with Anderson Hardwood Floors...does anybody have any idea approximately how much space is taken up by the glue BETWEEN the concrete and the hardwood plank?

That would be a function of the size of the trowel notches you use. Something on the order of 1/16" would be reasonable.
