 Post subject: Engineered Flooring: So Many Options!!

We live in Tampa, FL area, building a new home, and want to put in engineered hd flooring on concrete slab. We will be hiring an installer.
Picking out the species is daunting ... so many options! I must have 100 flooring sample bits right now :p But those samples obviously don't represent what the whole floor will look like because of natural variations from board to board and after color changes due to photosensitivity.

Suggestions please?
Love the look of Brazilian Cherry but am concerned that it will be come too red over time. Does it become like Bloodwood?
Love the look of Amendoim but not the hardness rating.
Love the hardness of Acacia but seems too rustic.

Natural maple is too light. Hickory and maple overall seem too flat.

We don't want a rustic floor with lots of knots
Seeking low to medium color variations
We like the texture of most "hand-scraped" samples
Seeking satin finish, maybe even no gloss finish
My husband is fanatical about dirt, we don't wear shoes in the house
We have pets - cats

Update: going with Jatoba (aka Brazilian Cherry).

I narrowed it down to Amendiom and Jatoba. Jatoba availability seems higher, really like the look of select grades, and the prices seem better for comparable products.
