I am building a light woodworking shop and storage area that has 1 1/8" Weyerhaeuser EdgeGold on the floor, originally intended to be a subfloor. I have seen several local restaurants that are using this as the final flooring.

Can this be a reasonable finished flooring for this application?

If so, what is the procedure to finish this material? I assume it will involve making sure the screws are all set, filling gaps, sanding, and finish coating. I installed and finished my own oak hardwood fooring in my home, so I have some idea what may be involved.

I suppose you could use a polyurethane floor finish on it. I'd use an OMU ( oil-modified urethane )
At least 3 coats. I'd think about adding a little sand in the last coat, for slip resistance. You could stain it if you wish. I would not take a drum sander or edger to it. Maybe a buffer with some 80 grit screen to clean it up. Or 100 grit 16" paper disc on a hardplate. Alternately, you could use an epoxy garage floor paint as well.
