Which would be better quality:

Kahrs Builders Series 7 1/2" planks ( each has 3 that are 2 3/4") OR Lauzon Red Oak Atlantic Grade 3 1/4

The main difference to me is that there are no bevels between the Kahrs boards while there are on the Lauzon. The Lauzon also are a little wider.

For me it will be based on quality, so what do you Pros think. Thank you very much

One thing you may not like about the Kahrs builder grade is the size of the pieces or what they call fillets. Yes they are 2 3/4" wide but very short. I don't recall the actual specs, (don't exceed 12 inches?) but it may create a very busy look. As far as the Lauzon, are you sure that isn't available in square edge? They also manufacture short pieces but not as short as the Kahrs mentioned. The beauty in Lauzon is it's so finely milled (square edge) you can't really notice it. A bevel on the other hand can stick out, though I haven't seen a beveled Lauzon job.
